INGREDIENTS

3/4 Cup IWISA NO. 1 SUPER MAIZE MEAL
40g Snowflake Cake Wheat Four
Pinch of salt
1/2 teaspoon Bicarbonate of soda
1 Large egg
3/4 cup Milk
Juice of 1 lemon
Oil for frying

TOPPING SUGGESTIONS

250ml Double thick Greek yoghurt or whipped cream
Fresh blueberries or fruit of your choice to serve
Syrup to pour

METHOD

1. Mix all dry ingredients together.
2. Combine egg, milk and lemon juice and add to dry ingredients a little at a time - beat until smooth. The batter can be used immediately or refrigerate overnight.
3. Heat a little oil in a frying pan and pour a little of the batter into the pan. Cook for a few minutes until the edges brown slightly and bubbles rise, flip and cook the other side.
4. Slide onto a plate lined with a dishtowel, cover and keep warm. Serve with double thick Greek yoghurt, blueberries and a drizzle of syrup.

Optional:

Delicious with crispy cooked bacon, syrup and chopped nuts.
